HIGH FLYING FOOD IN VALLETTA
In January Malta now rings to the sound of Baroque music and when you have finished you can wing your way to a perfect after concert eatery at Pegasus.
This contemporary restaurant and its high flying logo on the ground floor of the Phoenicia Hotel in Valletta is a short walk from nearly all the main venues used during the Baroque Music Festival.
It is music to the ears for fine diners looking for a relaxing dining experience featuring Maltese and its Mediterranean cuisine.
Chef Saul Halevi is keen to make his customers aware that they source around 80% of all the ingredients used from local area. Hand picking ingredients from various markets and producers on a daily basis.
His choice when it comes to beef is somewhat rather different he says, “We make sure that only the best fresh cuts are chosen from imported Scottish grass-fed cattle”.
Being on an island at the heart of the Mediterranean fish comes well up on menu, as you would expect. With an ever-changing selection of seasonal fresh fish being made available for diners to choose from.
Dining with my partner who is a vegetarian it gives me chance to sample a broader selection of dishes and I have to say that the kitchen team on the night did not disappoint in any way.
My partner she opted for an aged parmesan pannacotta with a balsamic reduction followed by risotto with porcini mushrooms, coffee dust, buffalo mozzarella foam, and red berries. I chose apple pockets with a delicate filling of local red shrimp tartare, followed by snapper taken off the bone at the table along with a selection of potatoes.
We shared a delightfully presented crunchy pistachio semi-freddo to complete the meal and we had selected a moderately priced Santero Prosecco as the wine for the evening.
With attentive staff and a sommelier on hand to help with wine selection and after a concert of classical music here is a perfect place to duet with your partner or for a group of friends to string along too!

Lunch: Monday – Sunday between 12:30hrs and 15:00hrs.
Dinner: Monday – Sunday between 19:00hrs. and 22:30hrs.
