He said, “We use beer from a local brewery. We are well known in this country for our beef so it was an obvious point to start at.   Make sure you get the flavours of the herbs, beautiful stock in there. Really nice bit of British beef.  Cooked well and flakes away. And plenty of filling in there.”

“I have taken that simple cheese and ham sandwich to the next level.  Ham hock and smoked cheese. Lovely mayonnaise, flaked ham hock which has a love texture to it. When cooked the hocks retain a wonderful flavour.”

“There is an amazing vegetarian option,  a spiced cauliflower wrap. For me even if you are a meat eater, its filling. This is a brilliant sandwich, lovely roasted cauliflower, plus coleslaw with texture, crunch and spice flavour running through it. Super generous!”

He added, “It may be just a sandwich, but it’s a very special sandwich.  It’s had a lot of heart and soul and thought put in to it.  To make a cheese and ham sandwich that goes around the world.”

Tom Kerridge has created dishes with a special focus on British provenance.

These include:

  • Warm Steak & Ale Pie
  • The Ham Hock & Smoked Cheddar Sandwich
